Rejoice! The farmers are back in the fields and you can finally plant your garden.
We can trade in the chili and beef stew for salads and grilled Sexy veggies.
Salads can be the greatest meal if they are served with a light and healthy salad dressing.
Beware of salads that are loaded with cheese and creamy dressing. You might as well be eating a bucket of fried chicken. The calories and grams of fat are about the same.
This is my favorite basic dressing recipe. You can modify it in many ways.
¼ cup freshly squeezed lime juice. (You can also use a combination of freshly squeezed lemon or orange juice.)
1 ½ tablespoons extra virgin olive oil (You could also use walnut oil for a different flavor.)
2 tablespoons rice wine vinegar (This can be replaced with any balsamic vinegar that you might like or a red wine vinegar.)
2 teaspoons fresh clover honey (or your favorite honey)
1 teaspoon cumin
1 small clove garlic, crushed
Dash sea salt
¼ teaspoon black pepper
Just mix it all together and shake or whisk. This is a great marinade for chicken breasts and fresh Sexy veggies, before you put them on the grill.
You can also spice this up by adding a teaspoon of spicy brown mustard or a chopped jalapeno pepper.
I meet with people every day who truly believe that the only good tasting food has to be smothered in heavy sauces and melted cheese.
Keep the ingredients to this simple little dressing on hand and you can make great tasting foods that are great for you and for your waist.
