No Bake Pumpkin Protein Balls

Breakfast, lunch, dinner these no bake protein balls are always the right answer. These no bake protein balls have 5 grams of protein and 2 grams of fiber each.  These balls are gluten-free and vegan too!  I’ve been making a variety of  no bake protein balls for years, but I have to say this one is my favorite. The texture is restaurant worthy!  There is an extra step to make these no bake protein balls the perfect texture, which my kids don’t like but I promise it’s worth the wait.

When I crack open a can of pumpkin puree I can easily find a way to use the rest of the can, like making brownie recluse spiders, or a healthier pumpkin spice latte

  • 2 Tablespoons Coconut Flour
  • 1 Tablespoon Vanilla Protein Powder
  • 1 Tablespoon Pumpkin Pie Spice 
  • 1/2 Tablespoon Chia Seeds
  • 1/2 Cup Cashew Butter
  • 1 Tablespoon Maple Syrup or Honey
  • 1/4 cup Pumpkin Puree
  •  
    1. Mix all the dry ingredients in a bowl until well combined.
    2. In a separate bowl, microwave the wet ingredients for 1 minute, until they can be easily combined.
    3. Add wet ingredients to dry ingredients and mix well. Put the in the freezer for about 10 minutes until chilled and easy to scoop.
    4. Scoop into balls that are roughly 1 tablespoon each. Chill in the freezer.
